Next up is the Netherlands!

For my dutch recipe I made stamppot with rookworst. Stamppot is a very hearty mash of a lot of vegetables, including cabbage, potatoes, leeks, parsnip, carrots and a lot more… It is served with grilled slices of spicy sausage on top. Perfect for a winter meal!

Stamppot with rookworst

Ingredients:

  • 4 russet potatoes
  • 3 carrots
  • 2 parsnips
  • 1 large turnip
  • 1 onion
  • 1 leek
  • 1 small butternut squash
  • 1 sweet potato
  • 1 savoy cabbage (can be replaced by kale or collard)
  • 1/4 bunch parsley
  • 2 rookworst (can be replaced with a spicy sausage like Spanish chorizo)
  • 1/2 cup butter

Directions:

First, peel the parsnip, carrot, turnip, potatoes, butternut squash, sweet potato and roughly cut them. Clean the cabbage and leek and slice them pretty thinly. Slice the onion thinly too.

In a very large pot, put all the vegetables. Add water until the vegetables are covered. Bring to a boil, cover and let simmer for 20 minutes or until all vegetables are soft.

Drain well, put the vegetables in the pot and mash them with a potato masher. Make sure to not mash too much, there should be some chunks of vegetables left. Add the butter in chunks and stir until fully melted. Chop the parsley and add it to the mash.

Slice the sausage. In a sauté pan, grill the sausage slices and add them on top of the mash in a plate.
