Iceland

Next up is Iceland! Icelandic food is composed of a lot of fish, lamb and even puffins. There is a little more variety than in Greenland as it’s probably possible to raise some animals and grow a little bit more vegetables than in Greenland.

For my Icelandic recipe I made Plokkfiskur. Plokkfiskur is a fish stew with potatoes and codfish. It’s served in a creamy broth. To go with the stew I made Icelandic brown bread. There are a lot of ways to make this brown bread, the most interesting probably being to cook it in the ground next to some very hot volcano!

Plokkfiskur

Ingredients:

  • 1.5 pound cod
  • 4 potatoes (either red or yellow but not russet)
  • 1 onion
  • 1 tomato
  • 1 carrot
  • 2 celery stalks
  • 3/4 cup white wine
  • 3 cups fish stock
  • 3 cups chicken stock
  • 1 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1/2 bunch chive

Directions:

Start by preparing all the ingredients. Chop the chive. Dice the tomato, onion, celery and onion. Cut the fish in 1 inch cubes. Wash the potatoes and cut them in long large chunks with the skin on. Measure out all the liquids.

In a dutch oven, melt the butter on medium heat and cook the onion, celery and carrot for 8 minutes stirring often.

After 8 minutes, add the white wine, bring to a boil and let reduce for 5 minutes. Add the fish stock, chicken stock and potatoes. Bring to a simmer, cover and let simmer for 20 minutes.

After 20 minutes, add the fish and tomatoes and cook for 5 minutes.

To finish, reduce the heat to low and add the cream. Let the broth reheat (don’t boil it otherwise the cream will curdle). Turn off the heat and serve. Sprinkle each plate with a generous amount of chive. You can serve this with Icelandic brown bread, recipe follows!

Icelandic brown bread

Ingredients:

  • 2 cups whole wheat flour
  • 1 1/2 cup of all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 3 tablespoons brown sugar
  • 2 1/2 cups buttermilk
  • 1/4 cup molasses

Directions:

In a large bowl, mix the 2 flours, baking soda, baking powder, salt and brown sugar.

In a small bowl, combine the buttermilk and the molasses. Pour the buttermilk mixture in the dry ingredients and mix until well combined.

Butter a loaf pan and put the mixture in it. Let rest for 10 minutes.

Preheat the oven at 300F. Place in the oven and cook for 60 minutes.

After 60 minutes, take the bread out of the oven and let it cool on a cooling rack for at least 30 minutes. Serve warm with the fish stew or butter.
