Nicaragua

Next up is Nicaragua! Nicaraguan cuisine as much of the other countries is composed of 3 main influences: indigenous, Caribbean, and Spanish. The main staple food is corn and a lot of meals integrate it in some way.

For my Nicaraguan meal I decided to make indio viejo. Indio viejo is a stew made with chicken or beef, some vegetables, mint and corn flour. It is a thick and hearty meal that goes well accompanied by tortillas and some zesty slaw for freshness. Here is the recipe.

Indio viejo

Ingredients:

  • 1 pound chicken thighs
  • 1 onion
  • 4 garlic cloves
  • 2 bell peppers
  • 4 tomatoes
  • 1 bunch mint
  • 2 cups corn flour
  • 2 cups chicken broth
  • 3 tablespoons butter
  • 2 teaspoons paprika or achiote powder
  • 1 lemon
  • 1/2 orange
  • Red chili flakes

Directions:

First, start by preparing all your ingredients. Chop the tomatoes, the bell peppers and the onion. Squeeze the juice of the lemon and the orange. Finely chop the garlic. Roughly cut the mint. Measure the corn flour, the paprika and the chicken broth.

Now that all this is done, we are ready to cook!

Heat about 3 tablespoons in a large pot, a large wok or a dutch oven. Once the butter is melted add the onion and the garlic. Cook for 5 minutes.

After 5 minutes, add the chicken and cook the chicken thighs for 5 minutes on each side.

Now add the mint, tomatoes and bell peppers. Cook for 10 minutes.

While this is cooking, in a large bowl, mix the corn flour with 1 cup of water and 2 cups of chicken broth.

Once the chicken is cooked, remove it from the pot and shred it with 2 forks.

Put the chicken back in the pot with the corn mixture, paprika, lemon and orange juice. Mix everything together and cook for an additional 10 minutes.

Serve with tortillas, avocados and some fresh slaw.
