Peru

Next up is Peru. Peruvian traditional food has a lot to offer: ceviches, barbecued meat, soups and even guinea pig!
Here are a few facts about Peru:

For my Peruvian recipe, I made ceviche. Ceviche is fish marinated in some lime juice which cooks it. The ceviche I made also has sweet potatoes, red onion and cilantro. Here is the recipe!

Ceviche

Ingredients:

  • 1 red onion
  • 600g of sea bass filet
  • Cilantro
  • 1 sweet potato
  • Sea salt
  • 1/2 inch piece of fresh ginger
  • 1 clove of garlic
  • 5 limes
  • 2 teaspoons amarillo chili paste (you can buy it or use another chili paste)

Directions:

First, prepare your ingredients. Peel and roughly cut the garlic and the ginger. Very thinly slice the onion. Press the limes.

Turn on the oven on 400F, poke a few holes in the sweet potato with a fork and roast it in the oven for 45 minutes or until soft but not falling apart.

Once the sweet potato is roasted, take it out of the oven. Let it cool, peel it and cut it in small cubes.

Remove the skin and cut the fish in 1/2 cubes.

Put the ginger, the garlic and about 4 roughly chopped cilantro sprigs with the stems in a bowl with the lime juice. Let it sit for 5 minutes. After 5 minutes strain the juice and discard the garlic, ginger and cilantro. Add a little bit of salt and the chili paste and mix well.

Put the onions in ice water and let them soak for 10 minutes. Drain and pat dry after 10 minutes.

Put the fish in a large bowl and add a large pinch of salt and stir. Let it sit for 2 minutes.

After 2 minutes, add the lime juice and mix. Let it sit for an additional 2 minutes. Add the onions. Finely chop a few cilantro sprig and add them to the fish. Finish by adding the sweet potato pieces. Mix well and serve right away!
