Paraguay

Next up after Brazil is Paraguay. As all the countries around there barbecuing seems to be very popular. The main ingredients in the Paraguayan food are meat, vegetables, manioc and maize.

For my Paraguayan recipe, I made Bori Bori. Bori Bori is a soup made with meat and vegetables in which some corn dumplings are added. You can make Bori Bori with any type of meat and vegetables. I chose to make it with chicken. Here is the recipe!

Bori Bori

Ingredients:

For the soup:

  • 2 chicken thighs
  • 1 tomato
  • 1 onion
  • 2 celery stalks
  • 2 carrots
  • 1 bell pepper
  • 2 cloves of garlic
  • 1 teaspoon oregano
  • 1 tablespoon butter
  • Olive
  • 36 fl oz chicken broth (1 carton and a little bit more)

For the dumplings:

  • 1 cup cornmeal
  • 2 Tablespoons grated parmesan
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 large egg
  • 3 green onions
  • A little bit of chicken broth

Directions:

First, prepare all your ingredients. Chop the onions, bell pepper, carrots, celery and garlic.

Chop the green onion and separate the white part from the green part.

Grate the parmesan cheese and measure the butter and oregano.

Bring a saucepan of water to a boil, put the tomato in it for about 15 seconds, remove, let cool and peel. If the skin doesn’t come off easily, put it back in the water for a few more seconds. Once the tomato is peeled, cut it in quarters and remove the seeds. Once the seeds are removed, dice the tomato.

To prepare the dumplings, put the cornmeal in a large bowl. Add the parmesan, the white part of the green onion, salt and pepper and stir everything together. Add the egg lightly beaten and mix. Add some chicken broth while mixing until you obtain a dough that holds together and is firm. If you added too much broth you can add a little bit of corn flour to solidify again.

Roll the dumplings in 1 inch balls and reserve on a plate in the fridge.

To prepare the soup, in a large pot, melt the butter with a little bit of olive oil and brown the chicken.

Once the chicken is browned. Remove it from the pot and add the onions. Cook the onions until translucent. Add the garlic and oregano and cook for 1 minute. Finally add the celery, carrot and bell pepper and cook for 5 minutes.

Add the chicken back to the pot. Pour the chicken broth in the pot, stir well and bring to a boil. Reduce the heat and cover. Let simmer for 15 minutes.

After 15 minutes add the dumplings and the tomato. Cover again Let simmer for 20 minutes.

After 15 minutes, serve and add some of the green part of the green onion on top of each plate of soup.
