Papua New Guinea

The next country up is the Papua new Guinea. It was a little more harder than the previous ones to find a classic recipe from this country. With Papua New Guinea we are definitely out of the south east asian area and getting in the pacific ocean area.

For my Papua new Guinean dish I made Mumu. Mumu is a combination of starchy vegetables, meat, pineapple and coconut milk. It is traditionally all wrapped in banana leafs and cooked in a pit hole.

Mumu

Ingredients:

  • 2 taro roots
  • 2 sweet potatoes
  • 1 lime
  • 1 plantain
  • 1 bunch spinach
  • 1 pound chicken thighs
  • 2 tablespoons curry powder
  • 1/2 pineapple
  • 2 cans coconut milk

Directions:

First, prepare all the ingredients to be ready to assemble. Cut the pineapple, the sweet potatoes and the taro roots in 1 inch cubes. Slice the plantain. Cut the lime in wedges and measure the curry powder

Preheat the oven to 400F.

In a dutch oven, Line the bottom and the sides with half the spinach leaves. Add the taro roots, the sweet potatoes and the plantain. Layer the chicken over the starchy vegetables. Add the curry powder and some salt on top of the chicken. Add the pineapple on top.

Cover the top with the other half of the spinach. Pour coconut milk over the spinach. Cover tightly and put in the oven for 2 hours.

After 2 hours, reduce the heat to 325F and cook for an additional thirty minutes.
