For my Indonesian dish I decided to make Nasi Goreng which is a fried rice with chicken, garlic, ginger, scallions and other very flavorful ingredients. It is served with an egg cooked sunny side up. It’s a very flavorful way of preparing rice and can be done with rice leftovers.
Nasi Goreng
Ingredients:
- 2 cups basmati rice
- 1 teaspoon turmeric
- 3 garlic cloves
- 1 inch ginger root
- 2 red chilis
- 6 scallions
- 4 chicken thighs
- 3 tablespoons soy sauce
- 1 tablespoon honey
- A few branch cilantro

Directions:
First prepare all your ingredients. Measure the rice, turmeric, soy sauce and honey. Peel and press the garlic with a garlic press or crush it. Peel and finely chop the ginger. Slice the scallions. Mix the soy sauce and the honey. Chop the chilis.

Thoroughly rinse the rice. In a pot, add the rice, turmeric, 3 cups of water and salt to taste. Bring to a boil quickly on high heat. Reduce to a simmer and cover. Let cook for the time indicated on your rice package.
Once cooked, spread the rice on a flat tray and let cool for about 10 minutes. Fluff the rice with a fork and put in the fridge for 1 hour until very cold.
In the meantime, in a saucepan, put 4 or 5 cilantro stems with leaves on, the chicken thighs, salt and pepper. Cover the chicken with water and boil for 15 minutes. After 15 minutes, take the chicken out and shred with a fork.
After the rice and chicken are ready, in a wok, heat 1 and a half tablespoon cooking oil on high heat. Add the garlic and cook for about 30 seconds until fragrant. Lower heat on low heat and add the he ginger, chilis and about half the scallions. Cook for 2 minutes on low heat.
After 2 minutes increase the heat to high again, add another tablespoon and a half of cooking oil and put the chicken in the wok. Cook until the chicken is reheated.
Add the rice in 4 batches and cook until each batch is fully reheated. Once all the rice is in, pour the soy sauce and honey mixture and stir well.
Adjust salt to taste if needed. Serve with the reserved half of the scallions and some chopped cilantro on top. You can also fry an egg and put it on top.
