For the Philippines I chose to make pork Adobo. Pork Adobo is pork cooked in vinegar and soy sauce with peppercorns. It is served with steamed white rice. This dish is delicious with some salty and vinegary flavors! I chose to use pork shoulder but this dish can also be made with pork belly or even chicken.
Pork Adobo
Ingredients:
- 2 pounds pork shoulder
- 4 bay leafs
- 10 cloves garlic
- 1/4 cup white vinegar
- 1/2 cup soy sauce
- 1 tablespoon black peppercorn
- 1 tablespoon white peppercorn (can be replace with black peppercorn)

Directions:
Cut the pork in 2 inch cubes, measure the soy sauce, vinegar, peppercorns and peel the garlic.

In a large bowl, put the meat and the soy sauce. Smash the garlic or use a garlic press and add it to the meat. Cover and marinate for 1 hour.
In a wok or a large sauté pan, heat some cooking oil. Add the meat mixture, the vinegar, the bay leafs, the peppercorns and 1 cup of water.
On high heat, bring to a boil and reduce heat to low. Cover and simmer for 1 hour stirring every 30 minutes.
After 1 hour, remove the lid and let simmer for an additional 30 minutes to reduce the sauce. It should be thick after 30 minutes. If it is too liquid set on medium heat and evaporate a little bit of the liquid.
Serve with white rice.
