For my Thai dish I made tom kha gai. Tom kha gai is an extremely flavorful coconut soup with a lot of spices, mushrooms and chicken.
Tom kha gai
Ingredients:
- 6 cups chicken stock
- 28 ounces full fat coconut milk
- 4 stalks lemongrass
- 6 shallots
- 1 cup cilantro leaves
- 4 thai chilis
- 3 inch piece galangal (can be replaced with ginger)
- 8 kaffir leaves
- 1 teaspoon brown sugar
- 1 pound deboned chicken thighs
- 2 cups buttons mushrooms
- 1/4 cup fish sauce
- 4 limes

Directions:
First step is to prepare all the ingredients. Cut the chicken in 1 inch pieces, peel the shallots and cut in halves, peel and cut the galangal in 1/2 inch pieces, cut the lemongrass in 1 inch pieces and cut the mushrooms in slices (if using whole mushrooms). Measure the fish sauce and press the juice of 2 limes.

In a large pot, combine the broth and the coconut milk. Add lemongrass, galangal, shallots, cilantro, chilis, and lime leafs.
Bring to a simmer and let gently simmer for 15 minutes. Do not boil.
After 15 minutes, strain through a sieve. Now that you are left with only the broth, add 1 teaspoon of brown sugar.
Add the chicken and the mushrooms to the broth and simmer for another 10 minutes.
Remove from heat, add the fish sauce and the juice of the 2 limes. Taste and adjust salt if necessary.
Serve with a few cilantro leaves and the other 2 limes cut in wedges.
