Pakistan

The last step before India is Pakistan. The pakistani cuisine seems very similar to indian cuisine. It took me a while to find a recipe that seemed to be a traditional pakistani recipe as most of the recipes are shared between the 2 countries.

For the pakistani meal I made chicken karahi. It’s pieces of chicken cooked in a spicy and flavorful sauce made with peppers, spices and tomatoes. It is served topped with cilantro and fresh ginger. I made a simple basmati rice to go along with it. I use a few cardamom pods and star anise in the pot with the rice to give it some nice flavors. Here is the recipe of the chicken karahi.

Chicken karahi

Ingredients:

  • 2 chicken drumsticks
  • 2 chicken thighs deboned
  • 1 chicken breast
  • 3 tomatoes
  • 1/2 head of garlic (about 8-10 cloves)
  • 2 inch piece of ginger
  • 3 green chiles or jalapeños
  • 1 bunch fresh cilantro
  • 1 teaspoon crushed coriander seeds
  • 1 teaspoon crushed cumin seeds
  • 1 tablespoon crushed dried red chili
  • 1/2 teaspoon turmeric
  • Salt
  • 1/4 cup oil

Directions:

As usual the first step will be to prepare all the ingredients. Cut the chicken thighs in half, the chicken breast in 1-2 inch pieces. Cut the jalapeños in slices, the tomatoes in small dices. Measure the spices and crush the coriander seeds, cumin seeds and red pepper.

Peel all the garlic and ginger and mash together in mortar to obtain a paste.

heat the oil in a wok or a large sauté pan. Add the garlic and ginger paste and cook for a few seconds.

Add the crushed coriander and cumin and stir.Then add the chicken and cook for 2 minutes.

Add the green chilis (save a couple pieces), take 2/3 of the bunch of cilantro and with a pair of scissors cut the leafs in small pieces directly in the pan with the chicken.

Mix well and add tomatoes salt and turmeric and crushed red chili.

Cover and cook for about 20 minutes (until all pieces of chicken are cooked).

In the meantime remove the leafs of the stems of the remaining cilantro and cut a little bit of ginger in matchsticks size pieces.

When the chicken is cooked, put on a plate with rice or naan and add the ginger, pieces of green chilis and cilantro on top.
