After France and Spain and before going to the African continent a last stop in Europe with Portugal.

There are many dishes to choose from in Portugal. A lot of dishes containing seafood or fish and especially Cod. So I decided to go for a recipe containing salt Cod which seems to be consumed a lot in Portugal. I went with a recipe called Bacalhau à Bras which is salt cod with potatoes and eggs. Here is the recipe!
Bacalhau à Bras
Ingredients:
- 400g salt cod
- 700g potatoes
- 1 onion
- 6 eggs
- 4 garlic cloves
- Pepper
- Fresh parsley
- Black olives

Directions:
The first step is to freshen the salt cod. In order to do that soak in cold water for 30 minutes and then put it in a pot with cold water and slowly heat (do not boil), discard the water and start the heating process again. Do that until it is not too salty to eat anymore (I did it 4 times and it was still pretty salty).
Once the salt cod is freshened if it has skin and bones remove them. Break apart in small pieces with your hands.
Cut the potatoes in matchsticks and the onion in small rings or small dices. Lightly beat the 6 eggs.
Now that all the ingredients are ready we can start cooking.

Fry the potatoes in a pan. Once the potatoes are fried set them aside on a paper towel.
In a large pan or a wok, sweat the onion and the garlic then add the salt cod pieces and cook for a few minutes.
Add the potatoes back in the pan and stir everything together.
Add the eggs and stir. Turn off the heat before the egg solidify. You don’t want to make an omelet.
Serve hot with some chopped parsley and black olive.
